International Tea Day: Honouring our local tea in a special way

If you’re one among the many locals in Seychelles who enjoys your daily cups of tea, you’ll be happy to learn that you can join the rest of the world in celebrating International Tea Day tomorrow, Friday May 21.

To give you a special and rather unique way to celebrate, Seychelles NATION contacted Nancy Aglaé, baker and founder at Cake My Day bakery in Victoria, to propose a cake recipe that makes use of our very own local tea.

The recipe is simple and uses ingredients that you probably already have at home or which can be easily found in most shops. For the tea, you can use ‘SeyTe’ teabags produced from our tea plantation and factory at Morne Blanc; Nancy tells us that any tea will work and the stronger the better!

Imagine ending Friday afternoon with some fresh, homemade tea-infused cake with a cup of tea. Even those who are faithful coffee lovers might be tempted to have a sip and a nibble!

 

Tea infused cake recipe

 

 

Ingredients

-           Butter: 170g or 3/4 cups

-           Eggs: x3

-           Sugar: 1 cup

-           Flour: 2 cups

-           Baking powder: 1 & 1/4 teaspoons

-           Salt: 1/2 teaspoon

-           Tea: x5 teabags

-           Milk: 2/3 cup

Method

1)        In a pan, infuse the tea bags with the milk. Bring to boil for about 5 minutes. Strain the tea bags, set the tea/milk aside to cool.

2)        In a large bowl, sift together the flour, baking powder and salt. Set aside.

3)        In a separate bowl, cream together the butter and sugar until light and fluffy.

4)        Add eggs one at a time and mix well.

 

5)        Add 1/3 of the flour mixture and mix, followed by 1/3 of the tea. Continue adding the dry ingredients and tea, mixing well in between until everything is well combined.

6)        Grease a loaf pan with butter and fill the loaf pan with the cake batter.

7)        Bake at 180C/350F for 45 minutes or until a toothpick inserted in the middle comes out clean, and let it cool.
