‘Fish and Seafood’ book launched |20 December 2017

 

 

 

 

 

Flavien Joubert, the principal of the Seychelles Tourism Academy (STA), has launched his third recipe book.

‘Fish and Seafood: Recipes of the Seychelles Islands’ is the product of two years of hard labour and dedication, with the end result being a collection of 32 recipes on fresh fish available in abundance in the Seychelles waters.

“The project was one which started under former Minister (for Tourism and Culture) Alain St Ange who felt that the initiative was not only a great way to market our cuisine but also encourage locals to use these types of fish more often by experimenting with them,” Mr Joubert explained.

Bonito, kingfish, barracuda, dorado and red snappers are among some of the fish which feature in his cookbook.

With an assortment of fish recipes either grilled, roasted, fried or curried served alongside some typically Seychellois side dishes such as rice, chatini, grated pawpaw and mangoes, the book is expected to be used by the Seychelles Tourism Board (STB) as a promotional and marketing tool.

1000 copies of the book have been published in the United Kingdom by Rila production with the support of STB and are expected to be made available in bookshops across the country.

Invited guests at the book launch, which was held at the Eden Bleu Hotel recently, were able to leave with their own signed copy of ‘Fish and Seafood’.

No stranger to chef’s whites, Mr Joubert has had a long career in the hospitality and tourism industry, and hopes to publish several more books in the future.
